Per i nostri impasti usiamo una selezione di farine scelte dai nostri maestri pizzaioli, sono macinate a pietra e ottenute dalla selezione dei migliori grani teneri italiani coltivati seguendo un’agricoltura sostenibile senza micro tossine disinfestanti o conservanti. Questo antico metodo di macinatura unito alle più moderne tecnologie e alla qualità del grano italiano, fanno sì che durante tutto il processo produttivo la farina non perda le sue parti nobili, come il germe di grano e le parti cruscali, ricche di fibre e nutrienti.

Come le farine anche gli altri ingredienti sono selezionati con attenzione, alcuni esempi: la mozzarella è fiordilatte prodotta solo con latte italiano, il pomodoro pelato è passato a mano tutti i giorni come una volta, l’olio è extravergine di oliva, il prosciutto crudo è Pio Tosini tra i migliori in Italia, le nostre salsicce sono prodotte dall’antica Norcineria Battaglia, usiamo guanciale di Amatrice e non pancetta o bacon, le acciughe del mar Cantabrico dissalate, pulite a mano e condite con olio EVO…
